Tartlets

Something different this time.  TARTLETS!! Hmmmm...... My kids simply love tartlets.  Me too.  And they helped me with the filling during Raya time.


I didn't do the tart shell.  Don't have enough time to do it this time.  I've bought it from LeaOven.  Anyway, I would like to share the recipe of the tart filling.  I got this recipe from Rinn's House.  Thanks Rinn for the wonderful recipe.  It's a custard filling.


Custard filling
Ingredients:
2 tablespoons flour
2 tablespoons custard powder or cornflour (I used cornflour, run out of stock for the custard powder)
8 tablespoons sugar
2 cups (500mi) fresh milk
2 eggs
2 tablespoons butter


Method:
1. Mix flour and custard powder/cornflour in a pot and add 2 tablespoons of fresh milk.  Stir to mix.
2. Add in eggs and mix.
3. Add in the balance of the milk.
4. Cook on low fire and stir continuously till the mixture is smooth and not lumpy.
5. Once the mixture thicken and shinny, it is ready.  Remove from the fire and allow to cool.  Ready to use.

Chocolate Moist Birthday Cake and Birthday Cupcakes

This birthday cake and cupcakes were ordered by Zizie for her lovely sister, whom is studying at Pusat Asasi UIIM, Nilai.  At first, she wanted to order cheese cake but knowing that her sister didn't like it, she changed it to chocolate moist cake plus the cupcakes.

Cake Decorating Tips (Beginners Only)

I would like to share this knowledge and ideas with newcomers.  I'm not an expert.  I'm still learning on the decoration and doing experiment on the recipes from time to time.

Ok, did you know that the first cakes baked in America where small loaves of sweet bread? Look how far we have come. Home bakers should not be intimidated by the elaborate cakes being made today. You do not need to be a pastry chef to make beautiful cakes, you just need the know-how and practice. Of course the right tools will go a long way in your cake decorating endeavors. Here are a few ideas you might like to try.

Every cake worth merit starts with a smooth icing. The cake needs to cool completely before they are iced and decorated. To keep crumbs from ending up in your icing and ruining the look of your cake, start with a thin base coat of frosting that is not quite as stiff as the regular layer will be. Once this coat is on, set the cake in the refrigerator for 20 minutes. This will set the icing and any crumbs will be caught in this first layer. Now you can spread a regular layer of icing without worrying about crumbs.


Watch these videos on how to crumb the cake, divide it, filling it and icing it.  But let me tell you first, it is easier watching than trying out ourself.  Anyway, practice makes perfect. :)

How to Smooth The Icing


Use an icing spatula to apply and smooth the second coat of icing. Once the icing is on the cake, start smoothing on the sides by running the spatula around the perimeter of the cake. One trick for smoothing the frosting is to dip the metal icing spatula in cold water, this will aid in smoothing the frosting. To smooth the top, dip the spatula in cold water and holding it horizontally over the top of the cake. Start at the point farthest from you, holding the spatula in both hands, skim the top of the icing by bringing the spatula straight toward you.

Hope you find the tip helpful.  Remember, practice makes perfect and don't give up.

Thank You and Selamat Hari Raya Cupcakes

Again, another late entry.  I should have wished you all earlier.  Anyway, better late than never - "Thank You and Selamat Hari Raya".  :)   Thank you to my all my customers, my readers, my blog visitors, my friends, and my family for supporting and encouraging me all this while.  I could NOT do much without all of your support.      

I received these 16 pieces cupcakes order from Maznie few days before Raya, asking me to deliver the cupcakes nearby my house.  I'm so delighted as the she wanted the wording on the cupcakes written "Terima Kasih dan Selamat Hari Raya". 

Therefore, I came up with these decoration. 
So, I took this opportunity to wish all of you again especially my customers, my blog visitors and my readers for your support. :)

Simplicity Is the Best

Well, what makes me say that?  Scroll down to look at the photos and you understand what I meant.  

It was quite sometimes ago that I received order from Maryann for a chocolate moist cake (all time favorite). Maryann was from Singapore and she ordered the cake for a surprise birthday celebration at Eagle Ranch, Port Dickson.  She wanted the cake to be as simple as possible.  No side decoration, no flowers or whatever.  Maryann even give me the layout of the cake design.

I'M BACK!!!

It's been quite a while, I've not updated my posting.  To be exact, it's one month.  Forgive me, for being quiet.  Of course, I'm still operating. :-)
